the tiles under your name are the ones you discarded
you did say a lot of right things about what your hand has to end up looking like but I will try to clarify that a bit more
what you need in your hand are 4 groups of 3 (triplets or sequences) and one pair
the additional requirement is called Yaku. There are a lot of different ones and you only need to meet 1 of them.
The triple dragon is a good one to keep in mind but the triple wind one is actually a bit more complicated as it has to be either the table wind (at the middle of the table there is a cardinal followed by a number, that cardinal is the table wind) or your wind, which you can see to the left of your character's face
another simple one is "All Simples" which only requires you to not have any dragons, winds, 1s or 9s.
The good thing about these Yakus is that they allow you to steal opponents tiles and still win the round
The most important Yaku is Riichi which applies to any hand that you didn't steal any tiles with. Once you are 1 tile away you can call Riichi (there is no prompt for it on screen so you just have to press it but you seem to already know that) and then just end the game as soon as the Ron or Tsumo option comes up
you lose points when you discard the last tile someone else needed, another player draws the last tile they needed or there are no tiles left in the draw pile and you are more than 1 tile away from winning
Some things become obvious with experience when you know what tiles you are needed trying to complete from a hand. You look at the board and see that other players already used the tile you need so you can discard them. Or you draw a tile and look at the discard/board and realize it's not going to help you so you can just discard it. End tiles of suits are typically bad to hold unless you have two of them or you already have a 3-straight. It's easy to ditch 1 and 9 unless they look promising from the start.
I think Linkurn. did a better job explaining stuff but maybe you will get something out of what I wrote. Like you, it took me forever to get the mahjong achievements but eventually with patience I did it.
Good Luck and don't forget to do something else in the game if it's pissing you off. The completion list is long, so certainly you can find something else. You won't make good decisions if you are just pissed off trying to rush games.
All i know, this is like a Japanese Texas hold'em with additional rules, just build 1-2-3, 5-6-7, or go for triplets / quads, This is too much to remember especially the hands / rules, so basically im playing entirely clueless, the way they explained it in the game is just poor. Afterall i have no clue how i even got this hand to be the "Winning" one, afterall from what i remember i declared "KONG" didn't i steal? how is that concealed? Well anyways i have no clue on the rules, its really confusing.
I managed to get like 4/10 Out's and 2 mangans, with like 5 million yen worth of wins for the CP list, so its something atleast
