Kuze using quick punch and fast movements so you need to counter it rush. using beast to fight Kuze is a big mistake because it's slow and Kuze will counter it easily unless there's lot of stuff lying around you like that one Kuze fight to save Tachibana
As soon as he punches, press lmb or rmb(or on controller 3)
-Dodge attacks
-Time counters properly (if you have any unlocked that is)
-Use heat actions more wisely instead of spamming the same one (due to how it does less damage the more you spam the same one)
Or
-Abuse Rush style to the ends of the world because it's Yakuza 0 and Yakuza 0's Rush style does not care.
TBH I also sucked when I was going through 0 but after really getting a hold of the combat in Kiwami 1 I eventually got decent. It's just a matter of experimenting with your attacks, seeing what works and doing more of that instead of what doesn't. It's a shallow system but also can be very deep.
edit: I just saw that you had a comment saying you already beat him, oh well
