Most parts in South East Asia adapted its technique by mixing other ingredients(chicken meat, kimchi, and others), but it's entirely based on wheat.
Think of pancakes molded on a ball shape and having onions, veggies, and seafood inside. Also you have soy, vinegar, diced chili, and any type of oil as the toppings(although the taste varies from those who make it).
Takoyaki is pretty good
You can try looking for a local place that makes. While what Lar Dass said is true and you might find a place that makes bad Takoyaki, the only thing that tastes worse than bad Takoyaki is no Takoyaki haha. Or if you want to risk making it yourself here is a recipe frm youtube you can try to follow.

Also I have been into the Yakuza games for a few years now, going out of my way to replace my broken ps3 to play the yakuza games prior to the remastered collection being a thing. But I have definitely become more curious and interested in the food and even trying more Japanese branded beers. As normie as that may sound.
You can barely taste the octopus, but it's still a decent street food. Much better than a hot dog IMO.
