It's required to fish for a certain substory iirc

From what I could tell from my own quick research, they are used for one or two substories and you can sell them for a little bit of cash. There might be CP challenges involved as well, but I would have to check that.

Mostly just to 100% the game. A few are used for substories like Seth said, but beyond that, it's just another collection to fill out.

There's a few CP to be had by catching x different types of fish, also maxing some NPC friendship gauges to partner with / acquire certain businesses for the real estate & kyabakura minigames. Sushi Gin in the Leisure King area of Kamurocho and Komian in Sôtenbori iirc; for the former you have to bring a certain number of different fish types (4 or 5 I think) to be made into sushi, for the latter 2 specific types that can be caught in the Sôtenbori river.
