Realistic simulation is a field of major real racing games such as Assetto Corsa and Forza Motorsport and you should buy and play there. The purpose is for most users playing this game to run casually and multiplayer with friends.
fivem is not nearly as fun as carx. arcady physics can be fun, but the game that's always been a simcade and only became somewhat popular because of that should remain as such. would you like forza more if it turned into NFS all of a sudden?
I have no idea what this ♥♥♥♥ is saying. Is it fun to be difficult? Are you aiming for something like a monk? Do you think everyone thinks so?
Do you know what a game is in the first place?

My advise to the OP as it helped in my case, play around with front end geometry related to steering until you see improvement in that and transitions.
