Now if you get too close, the prey runs away. There's a certain distance around the prey that when the player is in that distance, the prey runs away, it is different for all prey. (You can be far or kind of close, but not too close.)
Upgrading hunting helps too. And make sure you're still holding shift while you pounce.
I also started stockpiling animals so that I didn't need to hunt as often and didn't feel as desperate to catch animals. One last note: you can also forage for food, so don't feel like hunting is the only option if your kitty is hungry. :)
The mechanic: press and hold the shift key. Creep close enough that your prey gets a dot over its head. When the dot is full, while pressing shift, hit space. it doesn't matter whether you are facing them directly or not, but if you get too close they'll run away. You'll miss a lot, and then you'll miss less. If you hit, you'll see a skull droplet float up briefly over the corpse. While standing triumphantly over your kill, press e to pick it up.
Also I JUST figured out that you can go up to 150% fed, and rather than turning into a lazy beachball like my ACTUAL cat, you get a speed boost.
TBH I nearly stopped playing at the start because of the hunt mechanic -- I found it a bit overtuned for my tender noobness.
