Only one shark, the Bull Shark but they have talked about the possibility of other playable shark types maybe down the road as in dlc, along with different animals. Nobody knows for sure yet if they'll be added later.

Like what others have said, the bull shark you play as can evolve into something different. For example, there is a bio-electrical evolutionary path you can take that gives the shark weird fins and tendrils. The bone armour one makes your shark tanky and almost stone-like. There's also a stealth based 'shadow' evolution but we don't know what that looks like. Plus, there could be even more evolution forms in the released game with their own unique play styles
It makes sense too, since the game features both marine and freshwater biomes and as we already know, Bull Sharks are the only sharks that can swim in freshwater.

Seems a bit weird they had to specify that since this game is anything but scientifically accurate anyway.

I think it was because in the earlier development stages, this game was far more scientifically accurate before Tripwire bought it and added things like fast travel warp animations oe adaptations such as the cthulhu shock but ya never know, some youtubers will likely find something to complain about as they tend to tear apart every detail of a video game these days.
