What do they mean by own 5% of all shares?
Is it the same as saying own 5% of the total market? Do I need shares in every single company? Do dividend earning stocks count towards my total?

If you mean 5% so you can unlock the Succession rank you need alot of shares. It doesn't matter in how many company you just need to buy for alot of money and have them in shares at the same time.

wow what a let down... unless I'm missing something? I was able to acquire more and more stocks by finding profitable ones that were consistent over time and signing the dividend agreement. At the beginning of each day I would find a good stock to short, and give myself some money to play with. If I chose wisely I had enough at the end of the day to pay off the buy back, and throw the rest into the stocks I was long on with dividends applied. When I finally hit the 5% mark I had controlling interest of 3 companies, 350M in corporate assets and was earning around 100M a day in profits and dividends. When I returned to work the next day I am informed that I now work directly for the Miller family as a financial consultant. My corporate assets, money and stocks are gone, the new achievement is to acquire 10% of the market and I have only 1M corporate funds?!?!?! I was just getting the hang of making money in this game and now they just kick me to the curb to start all over? kinda sucks if you ask me. I did choose the succession of a 25% higher dividend payoff, but now that I no longer own any stock, I guess the grind begins all over again? I imagine the next round is going to be even worse...

this convinced me to stop playing, endless mode is practically pointless if they hard reset you.
