TL;DR don't rely on gear, kids
Whenever I see a new player I pick a character I don't know well, but that doesn't even matter when 1 combo or a couple of strong hits will drain their whole bar... =/
The point being, that is a REALLY bad game design decision... They probably won't change it for this game (since it's basically dead... or dying), but it would be really good if they didn't do it on the next one, wether it's MK11 or IJ3...
