Theres no need to quit and restart the game.
Well I've done a few dugeons, but I don't see it ever changing. Maybe it wasn't enough but from what I've seen from another person streaming, He did all quests in the first town, he explored some points of interest and throughout all of it (and some loads cause he died) the merchants never once restocked.
If you want to spam reset to look for a certain item you need to have a savegame where the vendors just reset. So sleep until morning and check the vendors. if their inventory changed you can go to main menu and load -> new vendor loadout every time
