Most passive animals will flee on sight and have a 1-2 tile longer sight range than you, so they'll see you before you see them. Hunting in game, slightly similar to irl, takes a certain level of experience and skill.
Even then, you'll need a stronger weapon to bring them down with ranged;
Crossbows are good if you can angle yourself to stun them; Xbows have a chance to do Knockback (with 100% chance on critical), and knocking an entity into an object (a tree for example) will stun them, allowing you to fire off more shots.
Bows are good if you get higher Bleed Chances, where one or two well placed shots will bleed it out, granted its not near the border whereas they'll escape.
In the future, Stealth will be something added in that will make things such as Hunting much more approachable, but for now you'll need to cope with fighting Wolves and Boars.
Ironically that is also how we used to hunt animal during stone age.
