So, I've already managed to stealth past them and flip the switch, but I died when they saw me and when I respanwed, I tried again, but the lever was already flipped, and the door is still locked. Am I missing something?

There's another switch on the bottom floor. Lure them to the hall you went through earlier and go the other way.

Still can't find that lever, can you give me more details on where it is?

Once you lure the the butcher gang into the left path, go to the right path (it's the one between the gap in balcony), then turn right to find a doorway. Check in there.

Just watched clip on YT how is that part actually playing. Now I'm super proud because I succeed to survive while being chased by them. :D
You need to throw the cans in right direction and move left > pull the lever. Then throw cans in any other direction except another route where you have to pull another lever, and then do again. Shortly said, throw the cans in opposite way of one you have to go through. And if you are hardcore like me, just run through the first, left path, and when you pull the lever, jump on the chair and then jump and run over/on their heads and run to another lever, you will take there 2 or 3 hits, but not enough to die.
