The real reason why the letter was sent (Theory)
Joey sent the letter, not Bendy, not anyone else in the studio.
It was Joey.
It was all part of Joey's plan to cheat death, the ink machine could be used to bring the deceased back to life, just in a body made of ink.
Joey sent the letter to Henry, Joey's old co-owner of the studio and one of his old friends.
This was all just to resurrect Joey.
Think of it like this, no one could've turned on the machine, because they were all turned into either ink monsters or cartoons. Joey needed someone to turn on the machine that lead to him being immortal.
This is when Henry recieved the letter.
Henry was the final step in Joey's plan to cheat death, Henry would be the one to bring Joey back to life and let him live forever.
Henry didn't know any better, he left the studio before the madness happened, he didn't know that the ink machine could bring the dead back to life.
Joey needed Henry to turn on the machine so Joey could live forever as his own creation, Bendy.

There's one thing people who make letter theories never consider, they always assume that Henry immediately came to the studio when he got the letter and not put it in a drawer for several years because he was still mad at Joey and just recently found it again.

And yet I didn't mention that in the theory.
It doesn't matter how long Joey waits to be brought back to life, he's going to become Bendy either way.
I didn't mention Henry coming to the studio immediately, all I said that Joey sent the letter to Henry and that was part of Joey's plan to cheat death.

I think Joey was already bendy, when Henry came to the studio. they way Alice talks about bendy, makes it sound like things have been that way for awhile. "there are so few rules to our world now. so little truths, but there is one rule we all know and resepct down here. Beware the ink demon"

if joey just had became bendy, then they won't have this rule.

also alice knows alot about him. warning you "stay out in the open to long and he will find you. and if you see him you better hide" or "they say he hears everything. and every creak of the floor. ever rustle of paper.

or after breaking all the cut outs "but i forgot to mention, he hates it when I do that" impling she has done this before and knows it makes him mad.

I think someone else sent the letter in hopes to lure Henry there, as he is the who will set them free.

We don't know what Bendy's been doing in between chapters 2-4, we also don't know how long Henry was out during these chapters and we don't know how long it took to get from the end of chapter 2 to the beginning of chapter 3.
We also don't know how long Henry was in the safe-house for.
The point is, we don't know how long it's been since Joey was brought back.

I think the biggest issue is we just don't have enough information to fill in the blanks, yet there are people who plug in random information as if it were common knowledge, mudding the truth.

We know that it's been thirty years since Henry worked with Joey. We know that Henry starts up the Ink Machine. We know that Sammy Lawrence has been an ink monster for some time. We know that Susie Campbell became obsessive over Alice Angel and somehow became the character. (Andduetosomedatamining) We know that this new version of Alice is more than likely Allison Pendle and the new version of Boris is likely Tom.

We don't know who the Ink Demon is, IF it is someone and not just a messed up ink clone of Bendy. We don't know what has become of Joey Drew since last Henry saw him. We don't even really know who Henry is. We know he use to be an animator and created characters for Joey Drew Studios. We don't know which characters he created, or if we've even seen them yet, or maybe it's the main cast, we just don't know.

Going by what the dev has said (Joey Drew is this world's Walt Disney, Bendy is this world's Mickey) Henry is most likely supposed to be Ub Iwerks, the guy who actually created Mickey Mouse and was the sole animator on the first cartoons. He quit from anger and stress because Walt took full credit for everything and Ub was never mentioned nor did his name ever appear on anything, plus it got too hard for one guy to make all the cartoons by himself.

While yes the theMeatly and Mike Mood stated that their conception of Joey Drew was that of Walt Disney, and in retrospect that makes Henry the Ub Iwerks of Joey Drew, but this doesn't really give us much of a look into who Henry is. At this point it's still speculation even if it is guided by the developers. As far as we're concern Henry could be struggling with schizophrenia and he's really just Joey Drew clinging to the failed company that is Joey Drew Studios. (Stupid idea, I know, hence why I slapped it there as an extreme).
If anything, the developers are just poking and prodding us with concepts that give us 'ideas' of the characters, but none of it is concrete. It leaves this vague mystery of not just who we are, but what our true motivation in the world is.
