why is it locked

the game tells me to turn on a projector but it doesn't work

I think the Youtubers like Markiplier were playing a slightly earlier version of the game - I notice that they can walk straight into the music room, but for me it was locked and I had to do other stuff first..

Pretty sure you're wrong. For me, the music room door was locked until I used the power switch. But watching Youtube videos of Markiplier and Jacksepticeye, they just walk straight in...if it makes a difference, they played version v1.2.0

It is the same. You'll need to flip the power switch, fight off the Searchers, then it'll open. No changes.

I'm assuming it's because that's v1.2.0 and we're on v.1.2.2...they must have changed it...

The door that leads to the recording studio with all the chairs and instruments. It's open from the beginning in the version they're playing...but in the version currently on Steam it's locked until you flick the power switch
