Fate stuff takes place in alternate time lines. But characters are for the most part all bound to a muli dimensional object(being) that plays with them like a god would. For their servitude it reincarnates them to be used as weapons by other people to play fights to the death with. Who so ever wins gets a wish granted to them. The fate stay night VN has 3 routes each being its own timeline with its own unique events (the anime follows one of these routes). Before that is the fate stay night zero anime, and after that is heavens feel.
Basic premise of Fate is 7 masters each summons a servant of a different heroic class (Saber, Lancer, Archer, Caster, Rider, Assassin, and Berserker) these servants are figures from history, legend or folklore... Master and servants team up then together they all have a massive free for all until one team can claim the holy grail, an artifact capable of granting the winners a single wish.
Fate/Extella Link is part of the Fate Extra-verse, this includes the Fate Extra PSP games and the Fate/Last Encore anime. As well as Extella. The basic premise is that Earth is uninhabitable due to natural resources running dry and so people live (digitally) in a massive server based on the moon. Order to play the titles would be... Fate/Extra or Extra/CCC -> Extella -> Extella Link.
If you only want an introduction and don't feel like digging out your psp or using an emulator, then the Last Encore anime can serve as an introduction to the Extra-verse.
There's the main series Fate/Stay Night, originally a vn with adult content which was never released in the west. It has three routes: Stay Night, Unlimited Blade Works and Heaven's Feel. Stay Night and Unlimited Blade Works have been adapted into full anime series while Heaven's Feel is getting three animated movies. There's also Fate/Zero which serves as a prequel and is Fate at its best... I'd personally recommend reading or watching that first.
Then you've got the likes of Fate/Apocrypha which is an alternative telling of Stay Night where the Nazi's got involved and claimed the holy grail during WWII. Lots of waifus included as Apocrypha has two teams of servants with a referee as compared to a free for all.
Fate/Prototype which never got a full series. Carnival Phantasm which is a cross over for all of Type-Moon's franchises. Fate/Kaleid a magical girl series. Fate/Grand Order with its mobile game, ova, planned anime series and movies. There's even a cooking spin-off.
tl;dr, there's a lot of Fate which you can get into but most doesn't apply to Extella as every single series is set in an alternative universe, this has also ended up becoming a long wall of text.
The downside is that Stay/Night anime is not very good (highly debated opinion, but far less debatable as years go on and better adaptations occur). It's not good for a variety of reasons that vary from person to person including "I think the main character is the worst ♥♥♥♥♥♥♥ main character in any anime ever" to "it's a really bad adaptation of the VN".
Link is truly its own separate universe though, so far removed from the plot of Stay Night, or even the games it's a sequel to, that it doesn't matter to a degree.
Extra (PSP), CCC (PSP), Extella (PC/PS4/Switch), now Link are in their own universe.
My advice, is to watch whatever you think is interesting, play whatever you think is interesting, and be aware that it rarely makes sense regardless. The only way to be lost in Fate is to assume you understood what was going on in the first place.

Watch Fate/Zero, as it is a prequel to the F/SN first story arc, and gives context to a few details.
For understanding some of the crap in Extella/Extella Link; Play Fate/Extra's first story route, then watch Last Encore, and then play the other routes, If you understand moonrunes play Extra CCC otherwise don't bother.
Watch or read Apocrypha because that is good.
Don't play Grand Order because it's a trash mobile game that trivialises the entire reason behind the holy grail war.
If you honestly cannot be bothered reading three arcs of a visual novel, at least read the first arc, and then you can watch Unlimited Bread works I guess. I don't know if all the Heaven's Feel movies are out yet though.
It always revolves around cute waifus fighting for X to get Y
(X being the holy grail or something that grants wishes, Y being a wish/goal)
Like Visual Novels? Read Fate/stay night
Then read Fate/hollow ataraxia
Don't like VN's? Watch Fate/Zero first if you like plot, watch Fate/stay night UBW (TV) if you like action more. They spoil eachother so there is no right way to watch them. After this watch Fate/stay night Heaven's Feel
It's optional to watch Fate/stay night (2006), it's a poor adaptation of the Fate route but if you don't want to read the visual novel then it's your only hope to see it.

Yes, all routes are canonical. There are 3 routes in Fate/stay night (Fate, UBW, HF).
They originate from a choose your own adventure game.
After this watch Apocrypha.
Then watch Kara no Kyoukai/Garden of the Sinners
After this if you like VN's read Tsukihime
Then play Kagetsu Tohya
If you don't like VN's but like Manga read Tsukihime's manga. It only covers one route (Arcueid's) but it's better than nothing since there isn't an anime.
After this play Melty Blood for the story, than continue to MB Actress Again Current Code. You can find them relatively easily for free online.
Now if you like JRPG's play Fate/Extra. Post playing Extra watch Last Encore, if you don't play Extra avoid Last Encore since Last Encore deviates from a bad end of Extra. You wont understand LE without playing Extra
Now you can watch Extra CCC's Gilgamesh Route on Youtube eng subbed. You can't play it in english since it never got released in that format, however someone went and subbed the whole game on youtube videos.
Now play Extella. It isn't required to play Extra, CCC, or watch LE prior to playing Extella since Extella is on a different worldline than Extra and CCC. Then play Extella Link
At this point you should be able to continue on your own
funny thing, I consider Heaven's feel to be the best out of the 3 FSN routes in both anime and VN after watching the lost butterfly movie recently.
Unless you have read the VN of heaven's feel, I guess its understandable for you since I haven't read the heaven's feel VN yet.

KataTsuki never sell their franchise for the gameplay, most of it purely for story
Even Fate Grand/Order Story is great Post America Arc, most ppl judge the game is bad mostly because of Gacha Rate and SUPER TOXIC non-initiated NA player (You can read all early discussion thread and judge it by yourself)
The first ever Fate though was the original 7 servants battle royale fight lol. If you want to know more about fate You should play the VN instead of Watching the anime.
