Could someone provide a list of motherboards that can use the Patriot Viper VP4100 M.2 2TB please??

As far as I know no one has made any such list. Even in real life. You're welcome to go check out all the boards in the game and compile a list yourself if you want to know.
MSI z490 is compatible
The easy answer is: All motherboards without built-in M.2 heatsinks.
Why do you think that you need this list? You could use a M.2 drive without a heatsink like the Gigabyte NVMe SSD M.2 and do not have to worry about motherboard compatibility issues.
Did you know that it does not matter whether you install a fast or slow M.2 drive?

You have it backwards. The Patriot Viper VP4100 that the OP is asking about comes with a heatsink attached. In the game we can not remove heatsinks from M.2 drives so the OP is asking for a list of motherboards that *DO NOT* come with a built in M.2 heatsink.
It's not universally if the M.2 slot has a cover. There are a few without covers that have thickness limits, and some covers are very forgiving. I've put together a spreadsheet for M.2 fitment if this helps:
https://docs.google.com/spreadsheets/d/1jfmbgoEMC8v3Il6cLCiWtYpgORHXiuRYdm6ADf9vUyY/edit?usp=sharing

I used 3 sizes:
Large fits the Corsair MP600
Medium fits the Patriot Viper VP4100
Small fails to fit either.

My recommendation with smaller slots is to use the Adata Spectrix RGB M.2s. They're not much slower than the VP4100s, have RGB and fit all M.2 slots.

I do plan to turn that sheet into a Steam guide, but wanna fiddle with formatting a wee bit first.

You can find the answer, in the "Parts & Unlock Levels" guide.

On the Motherboards sheet, I list a column for "M.2 Slots Supporting Heatsinks", which will support an "M.2 Heatsink" device, like the "Patriot Viper VP4100 M.2 2TB". You can easily use the dropdown on that column, to filter for "Greater than or equal to 1".

Enjoy.

Nice! I didn't know your guide that that feature in it.
Yep! I also add things like "GPU - Slot Size" and "Motherboard - Dual GPU Max Slot Size" :)
