As oposed to your own statement, and your choice of GPU's that are Crossfire as well.
Now ok indeed that Motherboard only allows dual GPU's for 1 slot PCI height GPU's.
So a dual Crossfire DFL Radeon 280 or 290 would work as they are 1 slot PCI.
Now that's about all I can suggest due to the very little infos you provide from the job, as we don't know neither your level (so if those GPU's are unlocked to you or not) nor if you need to reach a certain benchmark score nor if customer has a "brand" request (fanboi of sorts)

My only doubt now is, how do I know before hand if a MB supports dual GPU 1 slot or two?
Thats not specified before buying so I should do some research outside the game itself is that correct?
Maybe I should look at ATX o mATX?
But I went through:
- all the motherboards to find the "Max Dual GPU Slot Size", and
- all the GPUs to find the "Slot Size"

If you don't want to look outside of the game, you may take this as a rule of thumb :
Look at the PC stats before accepting a job, and if it has a micro or a mini ATX motherboard and a dual GPU request, reject the job as a safety rule.
Any S-ATX or ATX motherboard (that allow dual GPU that is) will allow any dual GPU of any size...
Also if a MOBO is a S-ATX or ATX size it also mean the case will have enough room for the dual GPU.
So while in game, scroll down the mail, and there is at the very bottom of the window a
[ PC STATS ] button, click on it, and it will show on the left side the full PC parts of the customer.
Then remember the MOBO model, and look in shop what size factor it is (micro-ATX, mini-ATX, S-ATX or ATX)
The very first 2 are the smaller sizes and could lead to issues with dual GPU.
That's also a reason to consider rejecting jobs as part of the game. Don't take any chances leading you to quit a job, because you accepted the jobs without checking first. The game is very unforgiving if you do so.
I have rejected many jobs earlyer in the game when I was not as comfortable as now on how I could complete certain jobs (OC request, some upgrade requests, I also tend to reject jobs with NZXT cases knowing they may have very often collision bugs, etc)
That's also why we recommand to any newer player of the game to avoid using smaller factor MOBO and smaller sizes cases in any story jobs, as it could lead to an impossible DUAL GPU upgrade request (if the mob becomes customer tagged that is)
For story jobs, always use at least medium towers or bigger, and by doing so try to use mainly at least S-ATX mobo as well.
For any RNG jobs, be as creative as you wish because those PC's will never ever come back to haunt you with upgrade requests.
But some RNG jobs can be tricky if a smaller case or a smaller MOBO is already installed, specially as you cannot change the PC case.

I just started playing and I ran into the same thing the OP did and this was great information, thank you very much.
I figured that there had to be a way to know what double gpu you could install by looking at the MB.
I accepted another crossfire gpu upgrade request and had no problem with it, probably because the mb and case that it came with already had support for it and got lucky.
But I'll be paying more attention to that detail you mention about how big the mb of the customer is.
