You can skip the first couple steps in game of course.

Basically when you are starting out, do a stress test to see base temperatures and make sure everything is working. Then increase the clock speed a small ammount, say 50-100mhz at a time, then do another stress test and see if it still works. If it crashes, try increasing the vcore a small ammount, then if it still crashes turn clock speed down until it doesnt. The ultimate goal is to get the highest clock you can while having the lowest vcore that is stable for it.
3dmark and occt are what you want to use in game for stress tests.

For some information on how to actually overclock in PCBS it's self, try looking through some of these videos here: https://www.youtube.com/results?search_query=pc+building+simulator+overclocking+guide

I find it helps greatly to have System Info running during a benchmark, which allows to to diagnose certain issues. For example, you can see when the wattage will exceed the PSU supply (and thus, by how much you likely need to increase it), and you can also see when the cores overheat. This might be solved by clocking back down a little, or just installing more and better cooling.

For the rest, trial and error and overclock by baby steps.
