The game still has some collision bugs, and only way to avoid them without losing stars due to uncompleted jobs is by saving manually OFTEN (each day before accepting new jobs?)
Therefore, while you seem to understand how the auto save works, why don't you take advantage of the manual save as well ?
You could have a manual save to revert back before that unfortunate incident.
Now second head up, when you realize you rejected accidentally (while in career mode obviously), if you use [ ESC ] to bring the escape menu, you see that

Click then on MAIN MENU and you see that

Accept to go back to main menu without saving.
Skip a day obviously, no workaround, except the manual save.
I know it's not perfect for what you want, but on the other side, I'm personally tired to have to accept twice to go to the default shop while wanting to go in free build, because I have a stupid "are you sure" confirmation button, while I don't even own other DLC's shops.
Confirm buttons everywhere are a turn off to me.
That's ofc an other point of view, one from someone who would hate to have a confirm button over the skip days one, just because you have to hit it often enough just to get a stupid Steam achievement.
