Those're different actions.
Flipping means that you're tilting your controller left or right during jumps to flip the bike. It's one of the basic tricks.
Spins are when you're pushing B on the controller. Biker just spins around himself. It can be used to deflect the projectiles.

But you're saying that you haven't got a "spinning playthrough"? Damn, to bad that we didn't put that in the achievements ;-)
I checked my achivements. I know that I did not get any one of the level-challenges that involed spinning because I did not know what it was. But apparently I got this achivement:
"Aerial Spin - Reflect a shot while you are mid-air."
So I must have made a spin at least once, but completly unintentional and without knowing what I was doing. :-D
