This unfortunately isn't like ZT or ZT2 where there's a really wide variety of extra animals available through expansions, this game only had two expansions (Australian animals & South American animals) and overall has a pretty limited variety even with the DLC included.
Well, as Zoldyck said, it's just matter of zoo fame to unlock "DLC" animals. Or if you're playing challenge mode, some animals are needed to be adopted from other zoo you made on other place, using animal reserve system IIRC.
