2. The pets are randomised. I don't know if it updates every time you log in, or if it's every so often. But I check it once every time I play and the selection of breed, age, and gender changes.
3. Not that I know of.
the pets are numbered in the order you adopted them. open the .dat file of the pet you want to edit and scroll until you find "petStats". you can change a bunch of different variables here. i recommend making a copy of the file you're changing first just in case you break something, but for the variables you asked about:
age: 0 = puppy/kitten, 1 = young, 2 = adult
gender: 0 = male, 1 = female
for age, you will also need to change the "growUpCount" value to match the new age value or they'll get stuck on things and glitch out as they try to move around because the AI will think the dog is still the age they started at, but they'll have the hitbox of whatever age you set them to. you may also encounter pets kind of bugging out after doing this (i noticed with my large breed dogs) but popping them in the pet hotel and bringing them back out seems to remedy that.
