VRIK's main feature is actually giving you a body. With this body you can not only see yourself, but you can holster equipment to various spots on your body without having to open up a menu to swap mid fight. It's practically essential and feels entirely natural unlike other games that give you physical bodies.
HIGGS works in conjunction with VRIK and lets you pick up objects in the world and interact with them with your fingers realstically grabbing them. You also have the option of using a Half-Life: Alyx styled telekinesis ability to pull objects towards you instead of having to physically walk over and pick it up. You can then sling it over your shoulder and it'll go into your inventory. It makes looting a lot more fun than just pressing a button while hovering your hand over some gold. It also lets you two-hand weapons!
PLANCK is a smaller mod that works alongside HIGGS that makes NPCs physically react to you. For instance if you bash someone on this side of the head with your hammer, their body will react accordingly. The mod's description explains it better than I'm currently doing.
There are also a good handful of other VR specific mods that enhance the overall experience and bring some different levels of interaction like SpellSiphon, Spell Wheel VR, Weapon Throw VR and MAGE VR. However, they stray a bit too far from the classic vanilla experience so I don't have them installed and I wouldn't recommend them for a first time VR player.
The SkyrimVR subreddit has some EXCELLENT resources available for people getting started with modding and the community is quite helpful. Most special edition mods will work right out of the gate but there are VR specific versions of old favorites like SkyUI.
If you want to use Wabbajack, an automated mod installer, FUS and/or UVRE are both modlists worth looking into.

If you're not fussed just look online for any old mod list. If you are fussed then build up a mod list of your own for your own game to your own taste.
Asking here what mods are best is a waste of time cus you'll end up with someone elses taste of two sugars, foam, double shot etc.
Sounds like you're not fussed so look online for whatever looks good and use Wabbajack.
from there though im going through some of the options with the mod manager, it seems like a good bundle but requires some playtesting with the optional mods included.
you see the names of mods in this thread that are included in the package. double check for sure, but it seems like its got the essential good ones people recommend
