I'll try disabling them and see if that fixes it.
It was one of the mods, I think possibly SKSEVR although I am not sure. I disabled all of them and the random switching issue stopped. Tbh, I prefer the default UI of the game as I had gotten used to it and I found the Sky UI VR to be more confusing. The problem with the UI isn't the UI itself, more how the trackpads scroll and move through it. It's easy to miss somethings and scroll past what you are trying to select or accidentally press the trackpad and add something (or drop it) when you didn't mean to but maybe that can be fixed by adjusting the trackpad sensitivity in the INI file somewhere?
The Dragonborn Speaks Naturally was a little hit and miss at times and it's just as easy to select the dialogue you want and say it out loud before you click it.
Anyway, my main issue has been fixed now.
It may have been, I'd stopped using that mod anyway and haven't had any trouble since with any other mods, not even SKSEVR.
