I suggest that you get Vortex or Mod Organiser 2 (if you're feeling more advanced) to deal with your mods as they both have profiles for SkyrimVR and you won't need to mess with any files.
There's tons of amazing guides from beginner to ultimate overhaul on Reddit - I suggest at least reading over a few to get a flavour of what to do:

The vanilla game in VR is pretty good and adds a fair bit of variety compared to Flatrim as the new controls really help with immersion. You can however, mod it till you don't recognise it or any point between the two...
I recommend the mod Dragonborn Speaks Naturally, which allows you to speak aloud your conversation lines and also use your voice to equip weapons, spells and anything you can imagine. I thought that talking to my computer games was going to be the dorkiest thing in the whole world, but I was so wrong and this mod is simply the greatest mod of all time.
Should add: I'm a 600-hour veteran of Flatrim but everything seems new again in VR.

I've been able to get a fair amount of mods working. The mods made for Skyrim SE work much better in VR. Especially the ones that alter character or environment textures. Some mods for the origional Skyrim work fine in VR such as the Lord of the Rings weapons pack.
I installed Dragonborn speaks naturally but I haven't been able to get it to work.
Skyrim VR is definately one of the best VR games out right now.
Make sure to 'Loot' with MO2, but you prob already are aware of the importance of this. CTD's only usually happen if your save game is missing scripts and such. Once you visually mod Skyrim VR to the max among other gameplay mods it will rival anything available VR wise presently. Just don't expect perfect controls as we all know Skyrim wasn't created with VR in mind. Stick to magic or archery, avoid sword play, melee...as those weapons will feel like styrofoam in your hands. A fully developed magic tree will make you a force to recon with. I play with multi follower mod (nearly a must for fully modded Legendary mode)...and still had one memorable battle last for over 3 hrs straight.
Having a spider the size of a car jump in front of you for the first time in VR is enough to make you have extra underwear handy...also, first dragon battle is very satisfying...taking out 2 dragons in later game is very satisfying...

My system is "supposed" to be very good tho gtx 1080 kabby lake 7700 samsung 500gig ssd. 2tb regular hd . However my internet is the best available in my area , it still sux . SO--with my limited knowlege , i just blame bethesda . but overall I love the vr ports for BOTH games for my rift.

Theres a bunch more rune mods and magic expansions that have wall spells and spike traps. I probably have 1000 new spells available across several magic expansion mods that I have to get around to play testing later.
Suppose I could add to this. I've had trouble getting any SKSE mods to work in Skyrim VR although I hear some people have. Some SKSE mods seemed to work when I was using MO2. My profiles without SKSE mods which were mostly trees and magic mods ran without any CTD. Since I switched to using Vortex which may not have anything to do with it because of new plugin features I still seem to get CTD if I use SKSE related mods.
Skyrim VR was one of the first big games I started playing in VR and it helped me develop my VR legs as they call it. At first I was only doing 15 minutes and needed a break. Now I can go longer and sit or stand without issues.
