Go to settings> than check out the controls tutorial shows you how to do mostly everything weapon wise.

on rift, you hold down the left grip button for a little bit

Sheathing a weapon wasn't in the help menu lol despite frequent references to it. On vive, you hold the dom hand menu/inventory button.

THANK YOU!!! I keep attacking everyone and couldnt figure this out! I am friggin blown away by the game though!
