Can I play (test) this game without headset?
Is it possible to start the game and play without headset? (like I would see 2 squeezed screens on monitor or something?)

I do not want to buy a new graphics card and I want to see whether I would be capable of playing this with my current one with no issues and possibly some mods.

No its not possible to play it without a headset.

I'd suggest posting your system specs but also running the 'SteamVR Performance Test'. This will test your systems rendering capability and inform you if its suitable for running VR.

Thanks, I am currently trying to overclock my RX 470 8GB and the SteamVR Performance Test is giving me score 6.5. I guess that's nice right?

(CPU is Ryzen 1600X)

Should be playable on your system. SkyrimVR is not that demanding, especially if you have Dynamic Resolution set on (better off though if you can get away with it).
