I purchase the key from a Brazilian Online Store called Nuuvem (www.nuuvem.com.br), then activated the key on Steam normally.

610370 is just the appId for the game, so that's the same for everyone. I think there is software to dump the subscriptions attached to your account, but I'm not familiar with them. You might find some info about that on SteamDB though.
I think the problem is that the key you bought must be attached to one of the subs in red at the bottom line, which is why there's no Linux depot attached to it. There's nothing you can do to fix it yourself (other than getting a refund from Nuuvem, and buying it again on Steam). It's something that a developer would have to fix.
It's 2 months since the purchase, i don't think i get a refund at this time.
I achieved to put the game to run again via proton and fixed the proton version on steam config for this game.
If the developer don't correct this i think for me only remains play via proton.

I have bought the game as soon as I saw it was released for Linux, and I ran in an issue:
I have a 32:9 3840x1080 monitor. However I cannot choose this resolution in the game. I only have access to 1920x1080 and 2560x1080. If I play in borderless or fullscreen the pixels are then streched.
Has someone any idea how I could solve this issue?
Sounds like the same issue as Nando_lavras above is having. The Linux and Mac depots have the same subscriptions.

Because of what I explained above. The key you bought is only associated with Windows content. It's up to the developer to fix that.
and this is the reason why I asked for vulkan. the opengl renderer in unity is not good (only uses one core) maybe the devs could integrate vulkan in a future patch, so that we have the choice to use it with "-force-vulkan" opengl can still be the default renderer
