5120X1440 zoom out ?
5120x1440 If you zoom out, you cannot zoom out. However, it is possible at other resolutions. I met this in Shadow Tactics, but is it the same in Desperado 3?

Halfway down the Widescreen Gaming Forum page for Shadow Tactics there are instructions for hex editing a certain file to enable the proper FoV.

For those of you who haven't used a hex editor before, I'll walk you through it.

1. Download a hex editor (I use HxD in this tutorial)
2. Open the "Assembly-CSharp.dll" file in your hex editor. The file is located in "Desperados 3 Demo\Desperados III_Data\Managed".
3. Hit Ctrl+R to open the Replace window and click on the Hex-values tab.
4. Copy and paste 39 8E E3 3F into the "Search for:" box and do the same with 60 E5 18 40 in the "Replace with:" box.
5. Change "Search direction" to All and click Replace all.
6. Close the Replace window and hit Ctrl+S to save the file (HxD automatically backs up the original file so you don't have to worry about that).
7. Enjoy Desperados 3 with a proper FoV!

Finally, here's the game running at the correct FoV in 21:9 after the fix has been applied (the FPS difference between this and the earlier screenshots is due to me enabling 200% resolution scale):

I am also wondering about this... Will the game support wider resolutions//multimonitors properly?

Not before release, unfortunately. It was supposed to come to steam on the 9th of June with Steams Summer Game Festival, however, it's been postponed until 16th, and so was the demo.

Your issue is also that the game cuts off more than half of your screen estate as they implemented Vert- instead of Hor+, robbing you of roughly 50 percent of screen view to mak it fit ;)

Just hexedit/ regedit that ♥♥♥♥, but it is a unity game and that this one does not support anything wider than 16:9 is just a lazy oversight, as changing it from Vert- to Hor+ is literally a thing of a few minutes.
