I am going to land this thing successfully even if it kills me!!!
So it looks like you did not bother to read ANYTHING ahout this sim before you bought it, this is not a easy to learn arcade shooter experience, this is a flight sim that was made primarily for the very niche flight sim fanbase, taken from that perspective, this sim is probabloy the best on the market but if you go into it thinking it is going to be like War thunder, well, sorry but that was your fault to begin with.
I encourage you to try to learn it, it is actually a very fun, engaging and challenging simulation that won't hold your hand and forces you to actually use your brain unlike many other titles out there.
If you are like me you just might spend most of your time in the tutorials on things you do not understand, that is part of the fun. I am alright with this. I can play the campaign game with the help of my "quick notes" that I have written out.
No, I don't think this game is too pick up and play friendly. If you have a demanding job or are going to school, loaded with homework, it is a pain in the a$s to try and learn this. But, I still think it is a pretty great game, and I have some memorable moments.
Oh, you can also pause the tutorial by hitting the pause button on your keyboard. This will help if you take notes. I didn't figure that out and learned it by watching someone else play.

stock settings are 1 to 1.... but you can set it so that at half of your sticks movment, the game only sees it as 1/4.
but at 100% stick, the game still sees it as 100%.
and to the OP.
its a sim dude... your not going to be able to jump into an a10 in real life and just fly the thing. im glad you figured it out.
when the tutorial says PRESS TMS UP SHORT OR THE K KEY.....you can go into options, press k, and it will take you to TMS UP, then you can set it tto what you want, or find the list of controls you need.
i constantly remap my controls.... when you get use to the plane, and know what buttons you press more often, you cna remap thows to buttons on your stick.
im got a x52 pro stick.... i use the one 8 way switch as the slew for my missles... but if a press and hold the pinky button, the same 8 way hat switch is used for zooming in and out, and creating a SPI mark point for lazor guided bombs.
this isnt how it wants me to set it up... it wants one 8 way switch for slew, and a totaly different one for zoom.... but to me, having all the controls for the mav/targeting pod cameria on one switch just makes WAY more sence.
