Specific spells aren't cast while offline - their activity time is increased, but they have no effect. The "Spells Cast" referenced in the Autocasting Upgrades is just that, your Spells Cast stat. It's not casting actual spells, so your spells' cast count don't increase, just the overall stat for Spells Cast.
At the stage of the game you're at, you're never going to be much farther than a few hours until the next reincarnation-level of gems, and overshooting that doesn't accomplish much. If you're going to be away from the game a while, then all a production build really accomplishes is maybe saving you a couple hours when you return. Instead, do something like a long Faceless run that'll benefit you in the long-term.
Almost at every point in the game, online builds will obviously be much better than offline. Only do offline production builds if you need it, however keep in mind that you should probably spend your offline time with other factions to accumulate time with them for Bloodstream effect bonus. Most used Bloodlines are Druid, Titan, Fairy, Undead (later on). Also, Faceless benefits quite a lot from offline with its Hive Mind upgrade
