Being able to play this with a steering wheel and VR headset would be amazing.

I hope, with the time, some minds in your team will strongly reconsider the question, because the nature of the game seems making easy the implentation of VR.
Did you try VR ? VR in racing game is just fantastic and lot of persons like me can't go back on a flat screen...

+1 for future plans on a VR version!
There are quite a few good racing games in VR to keep me busy, but none that give that retro-arcade vibe. The style of graphics would be perfect in VR - as the low poly count would insure a good frame rate.
Get it in VR on Steam and you will get enough additional revenue to make it worth it.... perhaps.
If you eventually get it on Quest and PSVR, I think you would be surprised by the additional sales.
Wishlisted, just to keep tabs on if VR is coming.
