You mean the game mechanics. Use weapons that inflict piercing damage to destroy the armor, and weapons that inflict explosive damage to destroy the hull.

There is also the harder strategy of going for the balloon pop/disable. Weapons that do area damage or set things on fire can prevent the enemies from firing back which allows you to do away with them over time. You can also try to pop their balloon, thus allowing you to get above them out of their gun arcs and ride them to the ground repeatedly popping their balloon till they die.
Both those methods and a little less consistent and require more skill than just going for your classic gat/mortar. They also take more time allowing the enemies teammates to try and stop you.
