So yeah, it should be possible ;)
I forced one, by tinkering with the children growing up event and then power leveled it. It's actually got some fairly.. interesting skills. Many of which you wouldn't really expect. Also has a fairly interesting stat preference from leveling.
There's also some events you can come across that have a "(Beasts)" option that gives different results to various encounters.
There's likely some other animals you can recruit as active party members as well.
(Fun Fact: The result to become a Fat Rat only has a 6% chance to be rolled normally.. lol)
