How to extract sprites?

Is there a way to extract the sprites from Moonlighter? I love the dynamic art style of the game and would like to dabble in pixel art, but taking screenshots is a clumsy way, not all villagers appear, and monsters are a headache to study.

I don't know how to open or check .asset or .resource files, and some of these files don't even have extensions.
