Or you might encounter none. But I think in all 1-3 levels, you should at least see one.
Also, there are 4 kinds of secret room (or at least ones that I've seen):
1. Room with an altar that contains a book.
2. Room with a few items and nothing more.
3. Room with an empty chest that you could fill with stuff. The chest will teleport your stuff back to town.
4. Room with a pillar that you can activate (up to four times) to fight enemy waves and claim treasure afterward. More horde, more valuable treasure.
I guess that since my first encounter with a secret room I have only found number 3
I never added stuff in there because I didn't expect I could tp my stuff home using that ^^

Also, worth mentioning that the chest is a one-off item. Once you've put in your items and close the inventory, it will close and teleport your items straightaway so best to use it when your inventory is full.
One of the rings is an amulet that negates poison damage, so it's pretty useful if you could get it to make the second dungeon easier. The easiest way to find it is to find the secret room with the horde monster (one that has a pillar that can be activated) and fight the waves 4 times. There are also several other amulets you could get too but I don't know what. The wiki probably has the whole list.
I am not going to read the wiki about the rings so far though
