Enchantments don't seem to do anything past the first enchant, and the only thing on the news page says that higher enchants only add a different effect to each piece of gear. Buffing past +1 is basically worthless.
Lastly, the steel gives you more health than the other two. It wouldn't make sense for it to also have the highest defense, because then you'd be unkillable. It's a suitable trade off to make the other options more appealing.
I went for iron armor because of the balance. More speed usually means me running into traps and enemies more. Dark Souls made me not want heavy armor and slow rolls, ever.
And I'd say try to get a bow as soon as you can and equip that next to a sword. There's no need to have 2 melee weapons and ranged attacks make some bosses easier.
Would have been good to know that the enchantments weren't worth it so I could have saved some cash. I kept upgrading to +++ and assumed the UI was buggy for not showing a damage increase or new damage element.
