Edit: Didn't really help; I get texture glitches on Hoth.
Had the same issue. for me it was the most recent CCC/drivers for my ATI Asus R7 240. I uninstalled the most recent CCC/Drivers and reinstalled 14.3. All is well now. Hope this helps someone.

Yeah, I was afraid this would be the cause...
I installed Crimson, so there's a lot of hell I have to go through to change drivers now.
The culprit was the AMD Crimson update
To Fix:
1. Go to https://mega.nz/#F!8tlAhDyQ!2AkAQukJKAYuIWEzDTGtFA!IslFkTSL
2. Click on Direct X 9.0
3. Right Click on 14.12.zip
4. Do a Standard Download
5. Extract Files to Same location as BattlefrontII.exe
This will prevent you from having to do a driver "rollback" simply by using older AMD Driver Dlls.
Edit: Some people have reported the game crashes when applying this fix. If this is happening to you use a different Driver Version under DirectX 9.0 for Step 3. Not all drivers may be supported by your AMD GPU which might cause your game to crash at launch.

Edit: Well, it added the "textures" to the textures, just not the color (like, the ground isn't just a blank color anymore, the detail is there, just not the correct color)
I had a bit of the same issue when I did it.
Instead of extracting the files to the Battlefront folder, Try opening and viewing the .zip file and just dragging and dropping the atiumd64.dll and atiumdag.dll file into the Game Data folder. That's when everything worked perfectly for me.
Geonosis no longer looks like an acid trip.
Edit: Try Version 15.1 I have been getting confirmation from multiple people that this is the one that will fix it.
