Keep in mind the AAT weak spot does not work for whatever reason
I tend to agree. The connecting leg joint on the Spider Walker seems to be a fairly large weak spot on a slow moving target. Ideally, one can get directly below it and fire upwards.
Most of the other weak spots are too specific or difficult to hit. My recommendations are hitting the Spider Walker's joints, the AT-ST back joint or the Republic/Imperial Hover Tank back panel. These seem to be the most easy to achieve, although each comes with its own set of risks. Hitting four critical spots in one life seems very difficult, so I would agree that the fake console might be ideal for anyone trying to achieve this quickly
If you want to grind for the Demolition Award, you can just switch the number of players on the field to 0 and shoot rockets at immobile AT-TEs or AT-ATs. I recently used that to finish my grind for the remote rockets
