Otherwise i think outside the game in the launcher you can enable/disable it via the dlc section. I'm not sure if you can disable it, start a game up without it, then enable it mid game and it show up though. It might only work if enabled when you start the game. Worth a shot though.
The coat option is there and the good son pack, but the weapons options actually are not, at least not by themselves.
There's a deluxe toggle but that doesn't just turn off the gold weapons it also disables the 4 mobsters and the curb stomp. It's a good start but they need to separate those out. The gold weapons are a bit overpowered to start with so I might not always want to start with them, but I don't want to disable any mobsters to do it.
It's not game breaking, but it might as well be individual options just like the coat and the good son already are.
