Why can't you pilot ships in single player?

It's my understanding that you can only pilot ships by using the console. Why? If they had it programmed into the game, why didn't they use it somewhere?

It's just completely baffling to me that they would implement something so awesome as flying an x-wing into their game, but use this feature no where in the single player. It's just crazy to me.

It was very buggy and tended to crash a lot. So they just left it as a cheat

Were there any levels that were worth flying a ship in ? I haven't played this game yet.
