If you want a single player mod, I recommend you to get this one since it's the best one imo.
This mod allows you to fight the lightsaber battles of the prequel era of star wars plus The Force Unleashed 1 and some additional challenges.

A Remastered edition of the original, 2009 “Movie Duels 2” mod for Jedi Knight: Jedi Academy, with updated maps, models, sounds and various other improvements, to bring the mod into the modern age.

I tried playing this mod but it just loads up the base game, do you know how to fix that?

Did you use "MD2.exe" to start the mod?
Steam will always open the base game, you have to launch the mod using the installed .exe program.

Download that open JK patch fix, extract it in your game folder, and use the launcher in there to launch this mod.(Since it uses Open JK and it gives some features that aren't available in the base game like wide screen support)

Emm. No.

You should have extract the big file in a folder named MD.(Delete all the files that are from the big one and instead extract them in a folder named MD)

You have put the open JK one correctly. So no need to remove those files.

Are there any new levels in the remastered version or did they just improve the graphics?

No new levels. Just better graphics(With option to play it in wide screen), more characters and some modifications to the gameplay.

It isn't among the best single player mods I've ever seen, but so far this is the best single player mod for Jedi Academy that I've ever seen.

How much of this changes the Single Player? I'm considering replaying this game again since the last time I played was years ago and I'm craving being a Jedi/Sith/Grey Saber slinging force user.

It doesn't change single player. It is a completely new campaign that features prequel era lightsaber duels/fights.(With some challenges and missions that aren't in prequel movies.)
