The ones on bridges you can cheese by gripping them and quickly moving/"throwing" them over the edge. When they push you as a reaction they will just fall down and die.
The ones on the ground (e.g. Korriban Tombs) though are quite tough. I suggest you run away from their lightning/drains and heal a lot. Use the line of sight provided by the pillars to take cover and regen. The rest just depends on how good you are with the saber, basically just try a couple of times and eventually you'll get him.

I wonder how Vader himself would fair against these guys

Also there's a couple you can just run past. They're like a final boss for some areas, and often the doorway just past them loads a new area. So it's not exactly sportsman-like, but I run past them.

If you have absorb I would highly suggest using it since it locks out literally all of their force powers forcing them to fight you with their saber.

Force grip lvl 3 turns almost all saber-wielders into pushovers. Just grip them, several moments later they'll push you AND turn off their weapon for 2 seconds. Run to them, make several saber hits, rinse and repeat. As I recall, only the very last boss (in both endings) is immune to this tactic.

That's a cheesy tactic and I hate cheesy tactics. I don't want to cheat.

Suit yourself. It's not cheating if it's game mechanic (which it is)

changing your stance works sometimes. going from light to heavy if you are a single saber.,
