I'd suggest starting small (1 or 2 styles of your choice, I'd strongly suggest Trickster as that has Dante's best mobility options and possibly either Swordmaster or Gunslinger, depending on whether you prefer using melee or firearms; and 2 or 3 guns and melee weapons of your choice) and start making your way up once you start getting more comfortable with him; you ideally want to figure out how each of his tools work, where they work best, and more importantly if they fit your particular playstyle. I've gotten better at using his different styles through practice and experimentation, but Royal Guard is still one I struggle to really get the most out of.
Knowing the enemies that will appear in a mission make it much easier to decide what to take. Proto Angelo can be bullied entirely with charging Coyote-A using gunslinger, it's boring and won't get you many style points, but it is effective.
There's also a channel on YouTube called Conqvist Guides (yes, I spelled it correctly). He has separate guides for everything from individual weapons, enemies, breakers, difficult bloody palace floors...everything. They are very in-depth as well even specifying what kind of stun an enemy will suffer from taking a hit from a specific move as well as unique interactions or properties the move might have, if any. If you're struggling to figure out how to launch or crumple a difficult enemy, Conqvist has you covered. Chaos (the rolling spikes enemy) can be easily handled with charging sword master style with Devil Sword Dante. Not only will that version of Round Trip stop the roll it will also break his spines allowing for you to easily launch and combo him to death.
I sense your problem is trying to tackle everything at once, break it down and take it in bite sized pieces.
