Sidestep/roll not working is probably down to you needing to get the directions correct, it can be a bit confusing because you have to move you character left or right and press jump, not necessarily move the stick left or right. if you have the "Table Hopper" skill, then doing this action just as an enemy attack is about to hit you will result in a fast dodge that you can followup with a dodge in any direction with the same input.
As for moving in the air, Calibur and Payline are really good options for moving you in the air quickly, but if you want to get extra movement and be able to move in any direction use Nero's air taunt. It offers similar height to a half jump and you can even Exceed during it. I think you'll find it pretty useful.
My scenario of optimal suggestion is to play DMC4 twice.
