Unfortunately I don't remember what I did exactly in that fight, took me about 3 attempts to beat him though.
I think ranged attacks that stun should work, just don't go melee
You want simple method? Lock-on the boss and shoot from rocket launcher. That's it. It will toggle automatically to other head when the one is knocked down. It's a matter of minute to get that and something like 5 shots for each head.

First off, it does have to do with downing the heads but it's not from downing all 3 heads. Under normal circumstances, King Cerberus will cycle through his 3 elements in a set order: Fire, Lightning, and then Ice. What this trophy wants you to do is to mess up that order. So it starts out with fire and then goes to lightning, just attack the lightning head and knock it out. This will cause it to skip lightning and go to ice instead. That should make the trophy pop."
