Barlog or Gilgamesh?
So, I don't really know much about the Devil May Cry universe as some other fans do. I've only played dmc 4 and 5 but I got the chance to see one of my, at least from the design, favorite weapons of the universe, one of them being Gilgamesh. Now Dmc 5 "introduced" Barlog and I haven't really heard of the Demon or whatever Barlog is except of a weapon. But I'm actually more interested in which of those weapons would actually be stronger if you'd havr a choice. I know that Gilgamesh is a Metal from the underworld and extremely powerful, but does it have a "special" ability like barlog which can ignite itself?
Okay I'm saying too much then necessary, so would barlog beat Gilgamesh or the other way around?

There's no way to tell, I think.
There's been 3 iterations of the same punching and kicking devil arms, which are:
-Beowulf in DMC3
-Gilgamesh in DMC4
-Balrog in DMC5

Beowulf and Gilgamesh are pretty much identical, but Balrog has a thing where the punching is a separate moveset from the kicking, and you can no longer charge every attack in a combo but, in return, you get the ignite the flame thing.

Who'd win in a fight between dante w/ balrog and dante w/ gilgamesh/beowulf I don't think can be answered, they're too similar, but I personally prefer Balrog.

And I guess he'd probably win, too? Balrog has more moves thanks to separating the punching moveset from the kicking moveset.

The strength comes from Dante, not the weapon. If you mean the material itself then I think it's a moot point since they're both "demonic" material, no reason to think one is stronger than the other.
