Any tip against "chaos" enemies?
I am admitedly not a pro player at all, but so far they are the only enemies I couldn't figure out how to properly handle.

With Nero you can use payline to wreak their spin and the shockwave from the basic arm gerbera seems to be able to stop their charge, but for V and Dante I couldn't quite figure out the right way.

So I just use the bike's land combos that seem to be able to kill just about anything with dante (especially if you time it properly to get the red mode) and I get the big guy with V, jump on him and laser the whole battlefield in hope they die before I run out of devil trigger.
Granted, it gives very easy SSS for those battles but it's very repetitive (as well as a bit boring) and I always get that nagging voice that tells me "DMC games always have ways to counter those very obvious attacks, you are doing it wrong".

It's like attacking the scissors non-stop on the ghost enemies until you break both, it works but just a single swing of your sword to parry their attack and a charged gun shot is both faster and much more satisfying.

With Donte use either shotgun (just shoot it or go for gunslinger R1+forward+B/style) or rocket launcher. Balrog hand swordmaster also works wonders with them. You can also go DT on them. Or if you get 3rd sword, you can hold down swordmaster and little swords will do the rest. When they lay down, you can use back to forth slice.

Many thanks, I wouldn't even have thought about trying to use the shotgun (I guess it shows why I am at best an average player).

No problem.
Other way for Dante can be flaming up balrog, and when they are stunned (and they fall pretty easy), do swordmaster charged uppercut (can't remember the name, wanted to write dragon punch - back+hold style button). It depends on difficulty, but one shot like that can kill them.

There are many ways to deal with enemies and more diverse you are with style and weapons, the more fun game turns out to be.

Is there a specific trick to destroying the blades on their back, or is it just a matter of getting their HP below a certain threshold?

If you are talking about when they are not spinning, as far as I can tell you have to hit the blades with your attacks (much easier to do with weapons with a long reach), I am pretty sure I destroyed those blades in just a few hits when I manage to directly hit their back compared to when I am blindly attacking them for damage.

Use the rocket launcher with GS style in mid-air, it is easier than using rebellion or DS to launch chaos from the ground if you want to run a jc combo loop. However, it can be difficult in DMD to launch chaos into air. DT stinger can easily remove the blade of chaos

ONE of the easiest ways to get the blades off the chaos (afterwards they become kinda trivial) is by doing a stinger directly into them while in Devil Trigger as Dante
(Although i have no idea of that hurts Dante or not but it will certainly get rid of the blades AND leave you standing)

Just block (not parry) the spin with RG till they are done (2-3 times) and combo from there,for some reason blocking the spin barely drains any DT and if you decide to parry the oncoming Spin,you barely get any DT/RG gauge as well making the risk high and reward low.Also single royal release towards the spin can break the blades.
