Unrealistic puzzle solutions are present in perhaps not every point & click adventure, but it's very common. I think these puzzles are a part of the fun of it though, I mean it's not illogical that the gum would add grip, just unrealistic that it would be this effective. I think to enjoy this, you just need patience and the right expectations.
Some, but not all of the love for this game is just nostalgia. It does have some great atmosphere and pace. I still enjoy the story, including the mythology of Atlantis, the mysteries of archaeology, and the globetrotting, all which feel very "Indy". As with many games, I also love having a sidekick, which makes certain approaches and situations more interesting, as well as adding some healthy banter.
I think your criticism is all fair, but hope you give it another go when you're in the mood.
Probably not but it sounds like you're viewing it without rose tinted glasses. They work wonders.
