Я видел на некоторых роликах, как главный герой отрубает голову противнику, как это сделать и есть ли еще какие нибудь приемы, помимо основных ударов, и того что показано в тренировочном бою?

Chopping off the head is an easter egg, there's one enemy you can do it to.

There are lots of techniques besides what is shown in training. Here are a few: kick snow/dirt, wave torch, reverse slash, reverse shoulder bash, duck-counter, jump-counter, jump attack, roll stab, fake, melee dagger, aimed dagger, etc.

Are reverse slash and reverse shoulder bash performed automatically? At least I've seen my hero doing it but I did not do anything special: just pressed an attack button.

Reverses are done when surrounded, if you press towards the opponent behind you, you’ll do a reverse. You can reverse slash high or low. After you do a reverse you can continue attacking in that direction, no need to do a full target switch. Once you master it, group combat becomes much easier.
